Moms Chicken Papriks From Gabe

4 Servings

NOTES : Serve over nokedli, or with mashed potatoes, or egg noodles You can add some Sour cream, to thicken a bit, or make a mixture of sour cream and flour, and slowly fold that in to make it a lot thicker. I found the Sour cream by itself to be adequate.

4 Pieces Of Chicken, with bone in and skin on
1 Medium cooking onion
3 cloves garlic
2 peppers, add a hot if you want some heat
1 Medium tomato
Hungarian paprika
Salt and pepper

Remove skin from chicken, set aside

Take the remaining chicken with bones in, lightly sautee, add 1 to 2 teaspoons paprika, lighly sautee with the paprika, then add enough water to just cover the chicken, salt and pepper to taste, bring to a boil, cover and let boil until chicken is cooked, about 20 to 30 min

Remove chicken, keep broth

Blanch and peel the tomato
Chop the onion, pepper, garlic
Add chicken skins
Lightly sautee the onions, pepper, garlic, and chicken skins

Break up the tomato, add to the onion mix, and add enough water to the pot to just cover the onion/skin mixture
Bring to a boil, cover, and cook until everything is done, about 10 to 15 min

Using a blender or a magic bullet, puree all the onion/chicken skin mixture, including water, along with the broth from the chicken pot
Put it all through a strainer to get rid of the bigger fatty pieces (you should have a nice thick puree from it)

Debone the chicken, add to the pureed mix
